We are deep into holiday season around here. This week, I made some Oat & Honey Rolls, which I plan to serve on Thanksgiving. I know not all of you celebrate this holiday, but I thought this would be a nice idea to share for any day of the week, really.

It’s adapted from the Olive Oil Brioche recipe in my book Cannelle et Vanille Bakes Simple. I simply replaced the sorghum flour with oat flour, added 25 grams of honey, and reduced sugar to 75 grams. Very simple changes. Divide dough into 12 rolls and sprinkle some oats and flaky salt on top before they go in the oven. You can watch the steps on the reel I made for Instagram.
