Chocolate-Date Granola This recipe is based on the Mix & Match Granola from my book Cannelle et Vanille. It is super versatile and lays down the foundation and ratios of a perfect granola. Here, I added a little bit of cacao and used dates as a sweetener. This past weekend, I made the Coconut-Cashew Yogurt from Cannelle et Vanille Bakes Simple and ate them together every morning. It’s also great with a little bit of oat milk. A few notes about this recipe: - If you cannot have oats, try a mixture of quinoa flakes and unsweetened coconut flakes. - Use raw buckwheat groats not toasted kasha. If you cannot find any buckwheat, then use more oats or see the tip above. - Use honey, maple syrup, brown rice syrup, or molasses in place of date syrup. Makes 6 cups 2 cups (200 g) gluten-free rolled oats 1 cup (170 g ) raw buckwheat groats 1 1/2 cups (230 g) raw hazelnuts, coarsely chopped 1/2 cup (160 g) date syrup 1/2 cup (115 g) freshly-squeezed orange juice 1/4 cup (115 g) melted coconut oil or olive oil 1/4 cup (25 g) cacao powder 1 tablespoon vanilla extract 1 teaspoon flaky salt 3 ounces (90 g) dates, pitted and coarsely chopped 3 ounces (90 g) 70% chocolate, coarsely chopped 2 tablespoons dried rose petals, optional 1. Combine the oats, buckwheat groats, and hazelnuts in a large bowl. In a medium bowl, whisk together the syrup, orange juice, oil, cacao, vanilla, and salt. Pour the liquid over the dried ingredients and toss until all is well coated with the syrup. Let the mixture sit for an hour so the oats and groats soften a little bit. 2. Preheat oven to 290F. Place your oven rack on lower third of the oven. Line a rimmed baking sheet with parchment paper. Evenly spread the granola all over the baking sheet. Bake for 45 to 55 minutes, turning the granola every 15 minutes, until it feels crispy and evenly golden. Be sure not to burn it. There will be a gooey element to it while warm and it might appear a little bit moist. That’s ok. The granola will continue to dry out as it cools. 3. When granola is cool, mix in the dates, chocolate chunks, and rose petals. Store in an airtight jar or container. It will keep for weeks.
